Vidalia® Sweet Onion Soup

Vidalia<sup>®</sup> French Onion Soup Au Gratin

2-3       medium G&R Vidalia® sweet onions, sliced thin
2          tablespoons margarine or butter, melted
4          cups beef broth or 2 cans beef consommé
½         cup water         
½         cup Madeira wine (optional)
½         cup shredded Swiss cheese
            salt and pepper to taste
            parmesan croutons

Cook onions in butter in a large skillet, covering until onions are tender (about 5 minutes). Uncover skillet and continue cooking onions until well browned, stirring occasionally. Stir in broth and water, cover and simmer 30 minutes. Add salt and pepper, stir in wine if desired. Ladle soup into individual oven-proof dishes, place parmesan croutons on each serving and sprinkle with Swiss cheese. Bake at 400 degrees for 15 minutes or until cheese is melted and golden brown. Yields 4 to 6 servings.
