Vidalia® Sweet Onion Pie (Quiche)
3 cups sliced or cubed G&R Vidalia® sweet onions
3 tablespoons butter or margarine
½ cup evaporated milk, undiluted
1 teaspoon salt
⅛ teaspoon black pepper
pie/pastry shell for 9-inch pie
Place prepared pie/pastry shell in pie plate. Saute onions in butter or margarine until tender, then arrange on pie/pastry shell. Beat eggs slightly, add cream, salt and pepper. Pour mixture over onions and bake at 425 degrees for 18 to 20 minutes, or until metal knife inserted in center comes out clean and pie is well browned. Yields 4 to 6 servings.
