Vidalia® Sweet Onion & Cheese Pie
4 cups chopped G&R Vidalia® sweet onions
2 cups shredded swiss cheese
2 tablespoons parmesan cheese
2 tablespoons sliced green olives
2 tablespoons chopped anchovies (optional)
2 tablespoons bacon drippings
2 tablespoons margarine
½ teaspoon salt
½ teaspoon pepper
1 baked pie/pastry shell for 9-inch pie
Saute onions in margarine with bacon drippings just until tender. Season with salt and pepper. Place half of Swiss cheese in bottom of pastry shell. Top with half of onions. Repeat layers. Sprinkle olives, anchovies and parmesan cheese over top. Bake at 350 degrees for 20 minutes.
Yields 6 to 8 servings.
