G&R Loaded potato with vidalia® onions
- 4 large baking potatoes
- 2 medium G&R Vidalia® Onions chopped
- 1/2 stick of butter
- 1/2 cup sharp shredded cheese
Bake potatoes in oven directly on rack, without aluminum foil, for approximately one hour at 375 degrees. Pierce with fork to make sure potatoes are done. While potatoes are cooking, sautee chopped onions in butter until tender. Scoop out top center of potatoes and stir in sauteed onions. Top with cheese, salt and pepper to taste. Bake for additional 12-15 minutes until cheese is melted. Garnish with chopped green onions. Yields four servings.
